"Raymond is the first person to tell you he prefers to be called a 'Cheese Artist' before being called a 'Chef' - his passion for creating artistic cheeseboards far surpasses the dysfunctional boards I've seen slapped together by many formally-trained Chefs over my 15 years in hospitality. I may be a bit biased as his friend, admirer, and pairing partner in wine and cheese, but he's been creating beautiful cheese boards and dishes for longer than I've been alive. The man knows a thing or two, or two thousand by now. We are lucky (and very grateful) to have his expertise, his French humor, and his pairing wit.
