Our Values
At MUST, we care about people and community. We care about You.
We also care about our Wine & Cheese producers and their impact on the environment, wildlife habitats, sustainable practices, and their Story.
We believe in and support winemakers, winery owners, cheese and charcuterie artisans, local artists, and food craftspeople who also care about their socioeconomic impact and business footprint.

Our Philosophies
Our WINE Philosophy
Our wine offerings are hand-selected by our Sommelier/Founder, Jessica Arkwright. She and Chef/Co-Founder Raymond have tasted and selected a core list of wines which reflect the terroir and balanced style of specific appellations adored by both, and have paired these wines with specific savory or sweet items by season and terroir.
We also feature an appellation and highlight producers we admire each month through our Cork & Curd Club, and offer these features by the taste, glass, or bottle.
All wines on our shelves are always at least sustainably-grown and produced, if not organic-certified, with minimal natural additives for preservation. We have a special spot in our hearts for wines that have a history of family tradition of caring for their land, vines and vineyard workers, and a desire to let the grapes speak for the land and seasonal influences, with minimal intervention from the winemaker.
We seek balance, character, and a sense of place in our wine selections - and we always think of food with wine.
If we don’t enjoy every last sip, it doesn’t make our lists.
Our FOOD Philosophy
Our “food artist”, Raymond Cotteret, has been a chef for over 40 years and inspires our philosophy of “what grows together, goes together,” as you’ll see throughout our menu. A focus on flavor and texture combinations are the backbone of each dish, coupled with Raymond’s stories of where ingredients hail from and what wines are traditionally paired in that region.
We have selected domestic & imported cheeses, charcuterie, and seafood conservas that are crafted with the utmost care and attention to quality.
Many of our producers have been practicing their craft for generations; others are local producers we proudly support. Similarly to our wine selections, we strive to purchase only the highest quality, natural and organic food products, with minimal to no preservatives, no GMOs, and no corn syrup or synthetic ingredients.
We offer vegan, dairy-free, gluten-free, low-carb, no-sugar-added, and other healthy substitutes and try our best to accommodate such requests. We try to keep everything as natural, clean, and transparent as possible, including our meat and dairy substitutes. Please share any food allergies with us prior to preparing your food; we cannot be made responsible for allergies unknown to us, so please help us to keep you safe.
Our LOCAL ARTS Philosophy
We believe that the appreciation of art goes hand-in-hand with wine and cheese, and we are excited to host artist benefits and collaborate on commissioned pieces to fill our walls as we grow.
Our first commissioned mural is being painted by local artist Carrie Jadus. She will be incorporating art nouveau elements, local St. Pete nostalgia, wine and cheese, and most importantly - our local community!
Exciting news on how to become part of our mural will be shared soon, we promise.
